Labor Day Cheeseburgers

Happy Labor Day! Well there are still a few hours left of the day here in New Jersey. So here’s a very basic burger idea that I’m sure you’ve heard of before. By the way, burgers are so easy to make, you shouldn’t be buying frozen patties from the store. Seriously, they’re not that good when compared to homemade ones. Here’s what you’ll need:

1 pound of 85% or 93% lean ground beef
1/2 cup shredded Colby-Jack Cheese
2 Tbsp of finely chopped fresh parsley
2-3 cloves finely chopped garlic
1/4 cup of finely chopped onion
Salt to taste (I use 2 big pinches)

Combine all ingredients in a mixing bowl. Work them together by folding them into each other using your hands. Avoid squeezing the meat in your fist. After a minute or two, the ingredients should all be thoroughly mixed. Portion them out so that you have four or five burgers (I usually do four myself). You can cook the burgers right away or wait a little while and let the flavors meld together. Cook the burgers on a grill. Watch for flareups due to melting cheese.

**Ok, here’s the thing about burgers, they’re made from ground beef. Bacteria can be on the inside or outside of the burger unlike steaks where bacteria is on the outside. Direct grilling will kill the bacteria on the outside of a steak, that’s why you can get them cooked rare without much fear of any problems. With burgers, you want to cook them through so that the internal temp is 160 degrees F so all the bacteria will be taken care of. This is where the cheese comes into play. By putting cheese inside the meat, the cheese bastes the burger from the inside so it will be juicy no matter what (assuming you don’t burn the bejeezus out of it). I do put extra cheese on top just because I love cheese.
